Smithfield Market is one of the largest of its kind in Europe – more than 100,000 tonnes of meat and other products pass through each year

 

When Greg Lawrence first started as a trainee at Smithfields 47 years ago, supermarkets didn’t sell very much meat. Meat supply and consumption has changed radically since then, but Smithfields is still going strong. In this interview, Lawrence, now chairman of Smithfield Market’s Tenants’ Association, discusses the changes he has seen over the years and the challenges ahead.
